# Cast Iron

Cast iron is the closest thing a kitchen has to a lifetime tool. This collection brings together Nalino healthy cast iron cookware — heavy-gauge fry pans, woks, grill plates, casserole pots and complete cast iron cookware sets, built for the way food is really cooked in the UAE: slow-simmered stews, rice and machboos, seared meat, grilled chicken and vegetables, and everything in between.

Cast iron holds heat far longer than aluminium or thin steel, so the pan does not drop temperature the moment cold meat touches the surface — that is what gives you a proper sear instead of steamed, grey chicken. Heat spreads evenly from the centre to the rim, so there are no hot spots and no half-cooked middles. And unlike coated pans that peel and get replaced every year or two, a cast iron pan seasons naturally with use and only gets better.

## Looking after cast iron

Wash by hand with warm water and a soft brush, dry it straight away on a low flame, and wipe a thin film of cooking oil over the surface while it is still warm. That is the whole routine. Doing it after every cook is what builds the dark, naturally non-stick patina that makes an old cast iron pan better than a new one.
